Ordering Mexican in Scotland....
Took myself out to dinner after a disastrous German class - intermediate deep end and I should definitely be in the kiddie pool! Ended up ordering fajitas - before you say anything about ordering Mexican in Scotland... I was trying to order something other than fish & chips or a hamburger. They were actually good but had a faint curry flavor or maybe just too much chilli powder to let any other flavoring through. Wish my taste buds were a bit more fine tuned. Anyway - the reason for this post - I NEED YOUR BEST FRESH SALSA RECIPES! Turns out that salsa in this country shares more genes with ketchup than diced tomatoes. Please e-mail me your recipes! Don't worry, Beth - we'll get you hooked up. Do we need to send you dried jalapeno peppers in the mail too? (CAN we send dried jalpenos to Scotland?)

-- one large onion, finely diced
-- two or three tomatoes, diced
-- fresh cilantro, diced (if you can't find fresh, you may be able to find dried or cilantro paste in a tube)
-- a few dashes of olive oil
-- some fresh garlic, diced (one clove, or a small spoonful of diced garlic, or a light sprinkle of garlic powder)
-- 1/4 cup or so of wine vinegar
-- some lime juice
-- diced jalapenos or other chilis to taste
-- salt and pepper to taste
Mix it all together and, if possible, let chill for an hour or so before serving.
As you can see, I don't measure things much (even the wine vinegar is a guess). I do roughly half-and-half volume of diced tomatoes and onions, then do all the seasoning to taste.
This is a very chunky salsa. If you run this through a food grinder or food processor, then you'll get a pureed salsa. ..bruce..
The problem with "salsa" is that it literally means "sauce", so unless you're in the US (where it usually has a very particular meaning) you never know what to expect when someone serves a "salsa" to you!
